A warm, bubbly Strawberry Cobbler is the perfect dessert for spring and summer. Sweet, juicy strawberries are baked beneath a golden buttery topping that’s crisp on the outside and soft inside. Serve it warm with vanilla ice cream or whipped cream for an easy crowd-pleasing treat.

  • Total Time: 55 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

For the Strawberry Filling:

6 cups fresh strawberries, hulled and sliced

3/4 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

For the Cobbler Topping:

1 cup all-purpose flour

1/2 cup granulated sugar

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup milk

1 teaspoon vanilla extract

Instructions

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish or similar casserole dish.

In a large bowl, combine strawberries, sugar, cornstarch, lemon juice, and vanilla. Stir well and pour into the prepared baking dish.

In another bowl, whisk together flour, sugar, baking powder, and salt.

Stir in melted butter, milk, and vanilla until just combined.

Spoon topping over strawberries, leaving some gaps for steam to escape.

Bake for 35–40 minutes, or until the topping is golden brown and the strawberry filling is bubbling.

Let cool for 10 minutes before serving.

Notes

Cooking Tips

  • Use ripe, sweet strawberries for best flavor.
  • If using frozen strawberries, thaw and drain excess liquid first.
  • Add a pinch of cinnamon to the topping for extra warmth.
  • Let the cobbler rest after baking so the filling thickens nicely.

Variations

  • Mixed Berry Cobbler: Add blueberries, raspberries, or blackberries.
  • Shortcake Style: Top with whipped cream instead of ice cream.
  • Crunchy Topping: Sprinkle coarse sugar on top before baking.
  • Gluten-Free: Use a 1:1 gluten-free flour blend.
