1 lb ground beef
1 packet taco seasoning
3/4 cup water
1 1/2 cups shredded cheddar cheese
1 1/2 cups shredded Monterey Jack or Mexican-blend cheese
1 cup black beans, rinsed and drained
1/2 cup corn (optional)
1 jalapeño, sliced
1/2 cup diced tomatoes or pico de gallo
1/4 cup sliced black olives (optional)
1/4 cup sliced green onions
For serving (optional but recommended):
Sour cream
Guacamole
Salsa or queso
Fresh cilantro
Instructions
Preheat oven to 400°F (200°C).
Cook the beef: In a skillet over medium heat, brown ground beef until fully cooked. Drain excess grease. Stir in taco seasoning and water; simmer 3–5 minutes until thickened.
Assemble nachos: Spread tortilla chips evenly on a large baking sheet. Layer with cooked beef, black beans, corn, jalapeños, and both cheeses.
Bake: Transfer to oven and bake for 10–15 minutes, or until cheese is melted and bubbly.
Finish & serve: Top with tomatoes, olives, green onions, and cilantro. Serve immediately with sour cream, guacamole, and salsa.
