Ingredients

1 lb ground beef

1 (10 oz) can Rotel diced tomatoes & green chilies, undrained

1 (16 oz) block Velveeta cheese, cubed

1 cup shredded cheddar cheese

1/2 cup heavy cream or milk

1 tsp chili powder

1/2 tsp cumin

1/2 tsp garlic powder

Salt & pepper, to taste

Optional Toppings

Cooked bacon bits

Diced jalapeños

Chopped green onions

Fresh cilantro

Instructions

In a large skillet over medium heat, cook the ground beef until fully browned. Drain excess grease.

Season beef with chili powder, cumin, garlic powder, salt, and pepper.

Reduce heat to low and add cubed Velveeta, shredded cheddar, Rotel tomatoes, and cream.

Stir frequently until cheeses are fully melted and smooth.

Transfer queso to a serving bowl or keep warm in a small slow cooker.

Top with bacon, jalapeños, green onions, or any desired toppings. Serve immediately with tortilla chips.
