Ingredients
For the Tart Crust
1 1/4 cups all-purpose flour
1/2 cup unsalted butter (cold, cubed)
1/4 cup powdered sugar
1 egg yolk
1-2 tbsp cold water
Pinch of salt
For the Pastry Cream
2 cups whole milk
1/2 cup granulated sugar
4 egg yolks
1/4 cup cornstarch
2 tbsp butter
1 tsp vanilla extract
For the Topping
2-3 cups fresh fruit (strawberries, blueberries, kiwi, raspberries, mango, etc.)
2 tbsp apricot jam (for glaze)
1 tbsp water
Instructions
In a bowl, mix flour, powdered sugar, and salt.
Cut in cold butter until crumbly.
Add egg yolk and cold water, mixing until dough forms.
Shape into a disk, wrap, and chill for 30 minutes.
Roll out and press into a tart pan.
Prick bottom with a fork and bake at 375°F (190°C) for 20–25 minutes until golden. Cool completely.
2. Prepare the Pastry CreamHeat milk in a saucepan until just steaming.
In a bowl, whisk egg yolks, sugar, and cornstarch.
Slowly pour warm milk into the mixture while whisking.
Return to heat and cook until thickened.
Remove from heat, stir in butter and vanilla.
Cool completely, then refrigerate.
3. Assemble the TartSpread chilled pastry cream evenly into the tart shell.
Arrange fresh fruit on top in a decorative pattern.
Heat apricot jam with water and brush lightly over fruit for a glossy finish.
Chill for at least 1–2 hours before serving.
