Instructions
In a large bowl, combine the cooked chicken, cream cheese, sour cream, cheddar cheese, Monterey Jack cheese, diced bell peppers, red onion, taco seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is evenly combined.
Assemble the quesadillasLay the tortillas flat on a clean surface. Spread the creamy chicken mixture evenly over one half of each tortilla, then fold the other half over to create a half-moon shape.
Cook until goldenHeat a large skillet or griddle over medium heat. Add a little butter or oil. Place one or two quesadillas in the skillet and cook for 2–4 minutes per side, or until the tortillas are golden brown and crisp and the filling is hot and melty.
Slice and serveTransfer the cooked quesadillas to a cutting board and let them rest for 1–2 minutes before slicing into wedges. Serve warm with salsa, guacamole, sour cream, or your favorite toppings.
