Ingredients
2 boneless, skinless chicken breasts, sliced in half lengthwise
Salt and black pepper, to taste
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup Italian-seasoned breadcrumbs
1/2 cup grated Parmesan cheese (divided)
3 tablespoons olive oil
12 oz spaghetti
3 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
Fresh basil or parsley, for garnish (optional)
Instructions
Cook the spaghetti according to package directions until al dente. Drain and set aside.
Prepare the chicken: Season chicken with salt and pepper. Dredge each piece in flour, dip in eggs, then coat with breadcrumbs mixed with half of the Parmesan cheese.
Cook the chicken: Heat olive oil in a large skillet over medium heat. Cook chicken 4–5 minutes per side until golden brown and cooked through. Transfer to a plate.
Slice and sauce: Slice chicken into strips. In the same skillet, add marinara sauce and bring to a gentle simmer.
Combine: Add cooked spaghetti to the sauce and toss to coat evenly.
Finish: Top pasta with sliced chicken, mozzarella, and remaining Parmesan. Cover and cook on low until cheese melts, about 3–5 minutes.
Serve garnished with fresh basil or parsley.
