4 medium zucchini
1 tablespoon olive oil

1/2 cup marinara or pizza sauce
1 cup shredded mozzarella cheese
1/4 cup mini pepperoni slices
2 tablespoons sliced black olives (optional)
2 tablespoons diced bell peppers (optional)

Instructions
Wash zucchini and slice each one lengthwise.
Use a spoon to scoop out the center flesh, creating “boats.”
Brush zucchini with olive oil and season with garlic powder, Italian seasoning, salt, and pepper.
Preheat air fryer to 375°F (190°C) for 3 minutes.
Place zucchini boats in the air fryer basket in a single layer.
Spoon marinara sauce into each zucchini half.
Top with mozzarella cheese, pepperoni, olives, bell peppers, and Parmesan.
Air fry for 8–10 minutes until zucchini is tender and cheese is melted and bubbly.
Garnish with fresh basil or parsley before serving.
