Ingredients
For the filling:
1 1/2 cups fresh or frozen strawberries (diced)
2 tbsp sugar
1 tbsp cornstarch
1 tsp lemon juice
1/2 tsp vanilla extract
For the crust:
1 package refrigerated pie crusts (2 crusts)
1 egg (for egg wash)
1 tbsp water

Instructions
Prepare the filling:
In a small saucepan, combine strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat for 4–5 minutes until thickened. Stir in vanilla and let cool.
Roll & cut dough:
Roll out pie crusts and cut into circles (about 4–5 inches wide).
Fill the pies:
Spoon 1–2 tablespoons of filling onto half of each circle, leaving edges clear.
Seal:
Fold over and crimp edges with a fork. Cut small slits on top for ventilation.
Egg wash:
Mix egg with water and brush over the tops.
Air fry:
Preheat air fryer to 350°F (175°C). Place pies in a single layer and cook for 8–10 minutes until golden brown.
Finish:
Cool slightly, then dust with powdered sugar or drizzle with glaze.
