Air Fryer Reuben Egg Rolls

Air Fryer Reuben Egg Rolls

Air Fryer Reuben Egg Rolls are a crispy, golden appetizer packed with all the classic flavors of a Reuben sandwich. Filled with savory corned beef, tangy sauerkraut, melty Swiss cheese, and wrapped in a crunchy egg roll wrapper, these bites are air-fried to perfection. Served with a creamy Thousand Island dipping sauce, they’re perfect for game day, parties, or a fun twist on deli-style comfort food.

  • Total Time: 25 minutes
  • Yield: 8 egg rolls (about 4 servings) 1x

Ingredients

Scale

For the Egg Rolls

8 egg roll wrappers

1 1/2 cups chopped corned beef

1 cup sauerkraut, well drained and squeezed dry

1 cup shredded Swiss cheese

2 tablespoons Thousand Island dressing

1 teaspoon Dijon mustard (optional)

Cooking spray or olive oil spray

For Dipping Sauce

1/2 cup Thousand Island dressing

1 teaspoon lemon juice (optional)

Instructions

Prepare the Filling
In a bowl, mix the chopped corned beef, drained sauerkraut, Swiss cheese, Thousand Island dressing, and Dijon mustard until well combined.

Assemble the Egg Rolls
Place an egg roll wrapper on a clean surface with a corner facing you (diamond shape). Add about 2–3 tablespoons of filling near the center.

Roll the Egg Rolls
Fold the bottom corner over the filling, then fold in the sides. Roll tightly toward the top corner, sealing the edge with a little water.

Preheat the Air Fryer
Preheat the air fryer to 375°F (190°C) for about 3 minutes.

Air Fry the Egg Rolls
Lightly spray the egg rolls with cooking spray and place them in the air fryer basket in a single layer. Air fry for 8–10 minutes, flipping halfway through, until golden and crispy.

Serve
Serve hot with extra Thousand Island dressing for dipping.

Notes

Cooking Tips

Drain the Sauerkraut Well
Excess moisture can make egg rolls soggy. Squeeze sauerkraut with paper towels before mixing.

Do Not Overfill
Too much filling can cause the egg rolls to burst open during cooking.

Cook in Batches
Leave space between egg rolls in the air fryer so hot air can circulate for maximum crispiness.

Flip Halfway Through
Turning the egg rolls ensures both sides become evenly golden and crunchy.

Variations

Pastrami Reuben Egg Rolls
Swap the corned beef for pastrami for a smoky deli flavor.

Spicy Reuben Egg Rolls
Add chopped pickled jalapeños or a dash of hot sauce to the filling.

Low-Carb Version
Use low-carb egg roll wrappers or wrap the filling in large cabbage leaves and air fry.

Extra Cheesy Version
Add shredded mozzarella or provolone along with the Swiss for a gooey center.

Mini Party Bites
Cut egg roll wrappers in half and make smaller rolls for party appetizers.
