Instructions
Prepare the Marinade:
In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, thyme, and onion powder.
Marinate the Chicken:
Add chicken pieces to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (up to 24 hours for deeper flavor).
Assemble Skewers:
Thread chicken onto skewers, alternating with veggies if desired. (If using wooden skewers, soak them in water for 20 minutes first.)
Preheat Air Fryer:
Preheat to 380°F (193°C) for 3–5 minutes.
Cook the Skewers:
Place skewers in a single layer in the air fryer basket. Cook for 12–14 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F.
