Brown Sugar Glazed Pork Chops

  • 4 bone-in pork chops (about 1 inch thick, 6-7 oz each)
  • 2 tbsp olive oil (or vegetable oil)
  • 1/2 cup light brown sugar, packed
  • 2 tbsp soy sauce
  • 2 tbsp Dijon mustard (or yellow if preferred)
  • 2 garlic cloves, minced (or 1 tsp garlic powder)
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt (adjust depending on soy sauce saltiness)
  • 2 tbsp water

Instructions

  1. Preheat oven:
    • Set oven to 375°F (190°C).
  2. Season the chops:
    • Pat pork chops dry with paper towels. Sprinkle both sides lightly with salt, pepper, and paprika.
  3. Make the glaze:
    • In a small bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic, and 2 tbsp water until smooth.
  4. Sear the pork chops:
    • Heat olive oil in a large oven-safe skillet over medium-high heat.
    • Sear pork chops for 2–3 minutes per side until golden brown. (They will not be cooked through yet.)
  5. Add glaze & bake:
    • Pour the brown sugar glaze evenly over the pork chops.
    • Transfer the skillet to the oven and bake for 12–15 minutes, or until internal temperature reaches 145°F (63°C).
  6. Rest & serve:
    • Remove from oven and let pork chops rest for 5 minutes. Spoon extra glaze from the pan over the chops before serving.
