Ingredients

- 4 bone-in pork chops (about 1 inch thick, 6-7 oz each)
- 2 tbsp olive oil (or vegetable oil)
- 1/2 cup light brown sugar, packed
- 2 tbsp soy sauce
- 2 tbsp Dijon mustard (or yellow if preferred)
- 2 garlic cloves, minced (or 1 tsp garlic powder)
- 1/2 tsp paprika
- 1/2 tsp black pepper
- 1/4 tsp salt (adjust depending on soy sauce saltiness)
- 2 tbsp water
Instructions
- Preheat oven:
- Set oven to 375°F (190°C).
- Season the chops:
- Pat pork chops dry with paper towels. Sprinkle both sides lightly with salt, pepper, and paprika.
- Make the glaze:
- In a small bowl, whisk together brown sugar, soy sauce, Dijon mustard, garlic, and 2 tbsp water until smooth.
- Sear the pork chops:
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear pork chops for 2–3 minutes per side until golden brown. (They will not be cooked through yet.)
- Add glaze & bake:
- Pour the brown sugar glaze evenly over the pork chops.
- Transfer the skillet to the oven and bake for 12–15 minutes, or until internal temperature reaches 145°F (63°C).
- Rest & serve:
- Remove from oven and let pork chops rest for 5 minutes. Spoon extra glaze from the pan over the chops before serving.
