Instructions
Sauté Aromatics
Heat olive oil in a medium soup pot over medium heat. Add diced onion and cook for 4–5 minutes until soft and translucent. Stir in garlic and cook for 30 seconds until fragrant.
Add Vegetables and Broth
Stir in peas, diced potato, broth, thyme, salt, and pepper. Bring the mixture to a gentle boil.
Simmer
Reduce heat and simmer for about 15 minutes, or until the potatoes are tender and peas are bright green.
Blend the Soup
Use an immersion blender to puree the soup until smooth. Alternatively, blend carefully in batches using a blender.
Finish the Soup
Stir in cream (if using), lemon juice, and fresh herbs. Taste and adjust seasoning as needed.
Serve
Ladle into bowls and garnish with cream, croutons, bacon bits, or fresh herbs.
Notes
Cooking Tips
Use Frozen Peas for Convenience
High-quality frozen peas are picked at peak freshness and work beautifully in this soup.
Keep the Color Bright
Avoid overcooking the peas to maintain that vibrant spring green color.
Blend Thoroughly
For an ultra-smooth soup, strain the soup after blending through a fine mesh sieve.
Add Fresh Herbs at the End
Mint, parsley, or basil added at the end keeps the flavor fresh and vibrant.
