  • Total Time: 25 minutes
  • Yield: 46 servings 1x

Ingredients

1 large bag tortilla chips

1 lb ground beef (or ground turkey)

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack or Mexican-blend cheese

1 cup black beans, drained and rinsed

1/2 cup corn (optional)

1/2 cup sliced jalapeños (fresh or pickled)

1/2 cup diced tomatoes

1/4 cup sliced black olives (optional)

For Topping After Baking:

Sour cream

Guacamole or sliced avocado

Fresh cilantro

Salsa or pico de gallo

Instructions

Preheat oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper or foil.

Cook the meat: Brown ground beef in a skillet over medium heat. Drain excess grease, then stir in taco seasoning according to package directions.

Assemble nachos: Spread tortilla chips evenly across the sheet pan. Sprinkle cooked beef, black beans, corn, tomatoes, olives, and jalapeños over the chips.

Add cheese: Evenly layer shredded cheeses over everything.

Bake: Place in the oven for 12–15 minutes, or until cheese is fully melted and bubbly.

Finish & serve: Remove from oven and add sour cream, guacamole, cilantro, and salsa. Serve immediately.

Notes

Cooking Tips

  • Layer smart: For maximum coverage, use two lighter layers of chips and toppings instead of one heavy pile.

  • Chip choice matters: Thick-cut tortilla chips hold up best under toppings.

  • Even melting: Shred your own cheese—it melts smoother than pre-shredded.

  • Crowd control: Serve hot toppings on the pan, cold toppings on the side to keep chips crisp.

Variations

  • Chicken Nachos: Swap beef for shredded rotisserie chicken tossed in taco seasoning.

  • Vegetarian Nachos: Skip meat and add extra beans, sautéed peppers, onions, and mushrooms.

  • BBQ Nachos: Use pulled pork or chicken with BBQ sauce and cheddar cheese.

  • Breakfast Nachos: Add scrambled eggs, breakfast sausage, and top with salsa and avocado.

  • Spicy Nachos: Drizzle with hot sauce or chipotle crema before serving.
