Ingredients
For the Pasta
12 oz fettuccine or linguine
1 tablespoon salt (for pasta water)

1 tablespoon olive oil
3 cloves garlic, minced
1 cup roasted red peppers (jarred or homemade)
1 cup heavy cream
1/2 cup whole milk
3/4 cup grated Parmesan cheese
2 tablespoons cream cheese (optional for extra creaminess)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika
1/4 teaspoon crushed red pepper flakes (optional)

Instructions
Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions until al dente. Reserve ½ cup pasta water, then drain the pasta and set aside.
2. Sauté the GarlicHeat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
3. Blend the SauceIn a blender or food processor, combine roasted red peppers, heavy cream, milk, and cream cheese. Blend until completely smooth.
4. Cook the Alfredo SaucePour the blended mixture into the skillet with the garlic. Stir in Parmesan cheese, salt, pepper, smoked paprika, and red pepper flakes. Simmer gently for 4–5 minutes until the sauce thickens.
5. Combine with PastaAdd the cooked pasta to the skillet and toss until fully coated. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
6. Garnish and ServeServe hot topped with fresh parsley and extra Parmesan cheese.
