Ingredients

2 lbs Yukon Gold or Russet potatoes, peeled and cut into wedges

1/3 cup olive oil

1/3 cup fresh lemon juice (about 2 lemons)

1 cup chicken broth or vegetable broth

4 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried thyme (optional)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon lemon zest (optional for extra flavor)

Fresh parsley, chopped (for garnish)

Instructions

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.

2. Prepare the Potatoes

Place the potato wedges in the baking dish in a single layer.

3. Make the Lemon Garlic Sauce

In a bowl, whisk together:

  • olive oil

  • thyme

     

  • salt and pepper

     

Pour the mixture evenly over the potatoes.

4. Roast the Potatoes

Bake uncovered for 25 minutes, then remove the pan and gently turn the potatoes.

Return to the oven and roast another 20–25 minutes, until the potatoes are golden brown, crispy on the edges, and tender inside. Most of the liquid will be absorbed.

6. Garnish and Serve

Sprinkle with fresh parsley and lemon zest before serving.
