Maple Roasted Chicken with Herbs

A beautifully caramelized whole chicken roasted with pure maple syrup, fresh herbs, garlic, and a touch of citrus. This dish delivers the perfect balance of sweet, savory, and aromatic flavors—ideal for Sunday dinners, holidays, or any night you want a comforting, show-stopping meal.

Ingredients

1 whole chicken (4-5 lbs)

1/3 cup pure maple syrup

3 tbsp olive oil or melted butter

4 cloves garlic, minced

2 tbsp fresh rosemary, chopped

2 tbsp fresh thyme leaves

2 tbsp fresh parsley, chopped

1 tbsp Dijon mustard

1 tsp paprika

Zest of 1 lemon

Juice of 1/2 lemon

Salt and pepper, to taste

1 onion, quartered

2-3 carrots, chopped

Instructions

  • Prep the Chicken
    Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan over the chopped vegetables.

  • Make the Herb–Maple Glaze
    In a bowl, whisk together maple syrup, olive oil (or butter), garlic, rosemary, thyme, parsley, Dijon mustard, paprika, lemon zest, lemon juice, salt, and pepper.

  • Season & Brush
    Rub a little of the glaze inside the chicken cavity. Tie the legs with kitchen twine. Brush the remaining glaze all over the chicken, ensuring full coverage.

  • Roast
    Roast for 1 hour 10–20 minutes, brushing halfway through, until the skin is deep golden and internal temperature reaches 165°F in the thickest part of the thigh.

  • Rest & Serve
    Let rest for 10 minutes, then carve and serve with the roasted vegetables and pan juices.

Notes

Cooking Tips

  • Dry the chicken well for crispier skin.

  • Use real maple syrup—not pancake syrup—for the best caramelization and flavor.

  • Start high, finish lower (optional): Begin at 450°F for 15 minutes, then drop to 375°F for the rest of the roast to ensure even browning.

  • Add broth to the pan if you prefer extra sauce or want to make a maple herb gravy.

  • Baste frequently for deeper color and a lacquered finish.

Maple Mustard Chicken

Add an extra 1 tbsp Dijon + 1 tbsp whole grain mustard for a tangier glaze.
