Ingredients
1 whole chicken (4-5 lbs)
1/3 cup pure maple syrup
3 tbsp olive oil or melted butter
4 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme leaves
2 tbsp fresh parsley, chopped
1 tbsp Dijon mustard
1 tsp paprika
Zest of 1 lemon
Juice of 1/2 lemon
Salt and pepper, to taste
1 onion, quartered
2-3 carrots, chopped
Instructions

Prep the Chicken
Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a roasting pan over the chopped vegetables. -
Make the Herb–Maple Glaze
In a bowl, whisk together maple syrup, olive oil (or butter), garlic, rosemary, thyme, parsley, Dijon mustard, paprika, lemon zest, lemon juice, salt, and pepper. -
Season & Brush
Rub a little of the glaze inside the chicken cavity. Tie the legs with kitchen twine. Brush the remaining glaze all over the chicken, ensuring full coverage. -
Roast
Roast for 1 hour 10–20 minutes, brushing halfway through, until the skin is deep golden and internal temperature reaches 165°F in the thickest part of the thigh. -
Rest & Serve
Let rest for 10 minutes, then carve and serve with the roasted vegetables and pan juices.
