Ingredients

Main:

  • 1 lb ground beef (80/20 or leaner)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 6 slices of bacon, chopped

  • 1 (10.5 oz) can condensed cheddar cheese soup (or cream of mushroom as a sub)

  • 1/2 cup sour cream

  • 1 cup shredded cheddar cheese

  • 1 tbsp ketchup

  • 1 tbsp yellow mustard

  • Salt & pepper to taste

  • 1 (32 oz) bag of frozen tater tots

Optional Toppings (after baking):

 
  • Chopped green onions

  • Diced pickles

  • Extra shredded cheese

  • Drizzle of ketchup/mustard

Instructions

1. Preheat oven

  • Preheat to 375°F (190°C). Grease a 9×13″ baking dish.

2. Cook bacon

  • In a skillet over medium heat, cook chopped bacon until crispy. Remove and set aside. Leave about 1 tbsp of bacon grease in the pan.

3. Cook ground beef mixture

  • In the same pan, add ground beef and cook until browned (5–7 mins).

  • Add diced onion and garlic, sauté 2–3 mins.

  • Drain excess fat if needed.

4. Combine ingredients

  • Reduce heat to low. Stir in cooked bacon, cheddar cheese soup, sour cream, ketchup, mustard, and half of the shredded cheese.

  • Season with salt and pepper. Mix well until combined.

5. Assemble casserole

  • Pour beef mixture into the greased baking dish and spread evenly.

  • Arrange frozen tater tots on top in a single layer.

6. Bake

  • Bake uncovered for 35–40 minutes, until tater tots are golden and crispy.

7. Add cheese and finish

  • Sprinkle remaining shredded cheese on top and return to oven for 5 more minutes, or until melted.

8. Serve

 

  • Let rest for 5–10 minutes. Top with optional garnishes if desired.
