Ingredients
Main:

1 lb ground beef (80/20 or leaner)

1 small onion, diced

2 cloves garlic, minced

6 slices of bacon, chopped

1 (10.5 oz) can condensed cheddar cheese soup (or cream of mushroom as a sub)

1/2 cup sour cream
-
1 cup shredded cheddar cheese
-
1 tbsp ketchup
-
1 tbsp yellow mustard
-
Salt & pepper to taste

1 (32 oz) bag of frozen tater tots
Optional Toppings (after baking):

Chopped green onions

Diced pickles

Extra shredded cheese

Drizzle of ketchup/mustard
Instructions
1. Preheat oven

Preheat to 375°F (190°C). Grease a 9×13″ baking dish.
2. Cook bacon

In a skillet over medium heat, cook chopped bacon until crispy. Remove and set aside. Leave about 1 tbsp of bacon grease in the pan.
3. Cook ground beef mixture

In the same pan, add ground beef and cook until browned (5–7 mins).

Add diced onion and garlic, sauté 2–3 mins.

Drain excess fat if needed.
4. Combine ingredients

Reduce heat to low. Stir in cooked bacon, cheddar cheese soup, sour cream, ketchup, mustard, and half of the shredded cheese.

Season with salt and pepper. Mix well until combined.
5. Assemble casserole

Pour beef mixture into the greased baking dish and spread evenly.

Arrange frozen tater tots on top in a single layer.
6. Bake

Bake uncovered for 35–40 minutes, until tater tots are golden and crispy.
7. Add cheese and finish

Sprinkle remaining shredded cheese on top and return to oven for 5 more minutes, or until melted.
8. Serve

Let rest for 5–10 minutes. Top with optional garnishes if desired.

- Serve with a simple green salad or steamed veggies to balance the richness.
