Ingredients

For the Cupcakes

1 1/2 cups all-purpose flour

1 cup granulated sugar

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup unsalted butter, softened

2 large eggs

3/4 cup milk

1 1/2 tsp vanilla extract

For the Buttercream Frosting

1 cup unsalted butter, softened

3 cups powdered sugar

2-3 tbsp milk

1 tsp vanilla extract

Pinch of salt

Bunny Decorations

Large marshmallows (for ears)

Pink sanding sugar or pink icing (ear centers)

Pink jelly beans or candy pearls (nose)

Mini chocolate chips or candy eyes

Shredded coconut (optional “bunny fur”)

Instructions

1. Preheat the Oven

Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.

2. Mix the Dry Ingredients

In a bowl, whisk together flour, baking powder, and salt.

3. Cream Butter and Sugar

In a large mixing bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).

4. Add Eggs and Vanilla

Beat in the eggs one at a time, then mix in the vanilla extract.

5. Combine the Batter

Alternate adding the dry ingredients and milk, mixing until just combined.

6. Bake the Cupcakes

Fill liners about 2/3 full with batter.
Bake 16–18 minutes or until a toothpick inserted in the center comes out clean.

7. Cool Completely

Allow cupcakes to cool in the pan for 5 minutes, then transfer to a rack to cool completely.

Make the Buttercream

Beat butter until creamy.

Gradually add powdered sugar.

Mix in vanilla, salt, and milk until smooth and fluffy.

If desired, tint frosting with pastel food coloring for Easter colors.


 

Decorate the Bunny Cupcakes

Spread or pipe frosting onto cooled cupcakes.

Roll the tops in shredded coconut for a fluffy bunny look (optional).

Cut marshmallows diagonally to create bunny ears and dip the sticky side into pink sugar.
