Ingredients
2 boneless, skinless chicken breasts (or 2 cups cooked shredded chicken)
2 tablespoons olive oil
Salt and black pepper, to taste
4 slices ciabatta, sourdough, or focaccia bread
4 tablespoons basil pesto
4 slices fresh mozzarella cheese
1 medium tomato, sliced
1 handful fresh arugula or spinach
1 tablespoon butter (optional, for toasting)
Instructions
Prepare the Chicken
Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 5–6 minutes per side until fully cooked and golden. Slice thinly.
Toast the Bread
Lightly butter the bread slices (optional) and toast them in a skillet or panini press until golden.
Spread the Pesto
Spread 1 tablespoon of pesto on each slice of bread.
Assemble the Sandwich
Layer sliced chicken, mozzarella cheese, tomato slices, and arugula onto two of the bread slices.
Melt the Cheese (Optional but Recommended)
Place the assembled sandwich back in the skillet or a panini press for 2–3 minutes until the cheese melts and the bread becomes crispy.
Serve
Slice the sandwich in half and serve warm.
