Peanut Butter Cookie Bars

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • (Optional) 1 cup chocolate chips or chopped peanuts for mix-in or topping

Instructions

  1. Preheat oven:
    • Set oven to 350°F (175°C). Grease or line a 9×13-inch baking pan with parchment paper.
  2. Cream butter, peanut butter & sugars:
    • In a large mixing bowl, beat butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2–3 minutes).
  3. Add eggs & vanilla:
    • Mix in eggs one at a time, then add vanilla extract until combined.
  4. Mix dry ingredients:
    • In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  5. Combine wet & dry:
    • Gradually add dry ingredients into the peanut butter mixture until just combined. Do not overmix.
    • Fold in chocolate chips or nuts if using.
  6. Spread in pan:
    • Press dough evenly into the prepared baking pan.
  7. Bake:
    • Bake for 25–30 minutes, or until golden brown and a toothpick inserted in the center comes out clean (a few moist crumbs are okay).
  8. Cool & cut:
    • Let bars cool completely in the pan before cutting into squares or rectangles.

Notes

  • For extra indulgence, drizzle melted chocolate on top after baking.
  • Swap creamy peanut butter for crunchy for added texture.
  • These bars freeze well—wrap tightly and store up to 2 months.
