  • Yield: 1 pan (9x13") 1x

Ingredients

For the Brownies:

  • 1 cup mashed ripe bananas (about 2-3 medium bananas)

  • 1/2 cup unsalted butter, melted

  • 1 cup granulated sugar

  • 1/2 cup light brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 cup sour cream or plain Greek yogurt

  • 1/2 cup chopped walnuts or pecans (optional)

  • 1/2 cup semi-sweet chocolate chips or chunks

Optional Cream Cheese Frosting (for a sweeter finish):

  • 4 oz cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • 1 cup powdered sugar

  • 1/2 tsp vanilla extract

Instructions

1. Preheat and Prep:

  • Preheat oven to 350°F (175°C).

  • Grease or line a 9×13-inch baking pan with parchment paper.

2. Mix the Wet Ingredients:

  • In a large bowl, combine mashed bananas, melted butter, granulated sugar, and brown sugar.

  • Add eggs and vanilla extract. Whisk until smooth.

3. Combine Dry Ingredients:

  • In a separate bowl, mix flour, salt, baking powder, and baking soda.

  • Gradually add dry ingredients to the wet mixture, stirring gently.

4. Add Sour Cream and Mix-Ins:

  • Stir in sour cream until batter is smooth.

  • Fold in nuts and chocolate chips (if using).

5. Bake:

  • Pour batter into prepared pan and spread evenly.

  • Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

  • Let cool in pan for 10–15 minutes before frosting or slicing.

6. Optional Frosting:

  • Beat cream cheese and butter until smooth.

  • Add powdered sugar and vanilla, beating until creamy.

  • Spread over cooled brownies.

7. Serve and Enjoy!

  • Cut into squares. Serve warm or chilled. Store leftovers covered in the fridge for up to 5 days.

Notes

  • Banana Tip: Use overripe bananas for the best flavor and moisture.

  • Make It Healthier: Swap half the flour for whole wheat, or reduce sugar slightly if bananas are extra sweet.

  • Storage: Keep in an airtight container at room temp for 2–3 days, or refrigerate for up to 5 days. Freezes well for up to 2 months.

  • Add-ins: You can swirl in peanut butter or Nutella before baking for a twist.
