Ingredients

2 medium sweet potatoes (about 1.5 lbs), peeled or unpeeled

1-2 tbsp olive oil (or avocado oil)

1 tbsp cornstarch (for extra crisp—optional but recommended)

1 tsp paprika (smoked or regular)

1/2 tsp garlic powder

1/2 tsp onion powder (optional)

3/4 tsp kosher salt (add more to taste after cooking)

1/4 tsp black pepper

Optional for serving: ketchup, spicy mayo, honey mustard, or ranch

Instructions

Cut the fries: Slice sweet potatoes into evenly sized fries (about 1/4-inch thick).

Soak (optional but helpful): Soak fries in cold water for 20–30 minutes, then drain and pat very dry. (If you’re short on time, just rinse and dry well.)

Season: Toss fries with oil, then sprinkle cornstarch and seasonings. Toss again until evenly coated.

Preheat air fryer: 3 minutes at 380°F (if your model doesn’t preheat, just start cooking).

Air fry: Arrange fries in a single layer (work in batches). Cook at 380°F for 12–16 minutes, shaking or tossing every 5 minutes.

Finish: Increase crispiness by cooking an extra 1–2 minutes at 400°F if needed. Salt to taste and serve immediately.
