Ingredients
3 medium fresh beets, peeled
1 1/2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika (optional)
1/2 teaspoon dried thyme or rosemary (optional)
Optional toppings:
Crumbled feta or goat cheese
Fresh parsley
Balsamic glaze drizzle
Instructions
Prepare the Beets
Peel the beets and cut them into wedge-shaped pieces, similar to potato wedges.
Season the Beets
Place the beet wedges in a bowl. Drizzle with olive oil and toss with salt, pepper, garlic powder, paprika, and herbs until evenly coated.
Preheat Air Fryer
Preheat the air fryer to 380°F (193°C) for about 3 minutes.
Cook the Beet Wedges
Arrange the beet wedges in a single layer in the air fryer basket. Cook for 18–22 minutes, shaking the basket halfway through.
Check for Doneness
Beets should be fork-tender with lightly crisped edges.
Serve
Transfer to a serving plate and garnish with herbs, cheese, or a drizzle of balsamic glaze.
Notes
Cooking Tips
Cut evenly:
Uniform wedges help the beets cook evenly and crisp at the same rate.
Don’t overcrowd the basket:
Cook in batches if needed to allow proper air circulation.
Use gloves when peeling:
Beets can stain hands and cutting boards.
Shake halfway through cooking:
This helps the wedges roast evenly and develop crisp edges.
For extra crispiness:
Lightly spray the wedges with cooking spray before air frying.
