These Air Fryer Mini Meatloaves are juicy, flavorful, and perfectly portioned for fast weeknight dinners. They cook in nearly half the time of traditional meatloaf, with a caramelized glaze on top and tender centers—no oven required!

  • Total Time: 25 minutes
  • Yield: 4 mini meatloaves 1x

Ingredients

Scale

1 lb ground beef (80/20 recommended)

1/2 cup breadcrumbs (or panko)

1/4 cup milk

1 large egg

1/2 small onion, finely diced

1 tsp garlic powder

1 tsp onion powder

1 tsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

Glaze

1/3 cup ketchup

1 1/2 tbsp brown sugar

1 tsp mustard (optional)

Instructions

In a large bowl, mix breadcrumbs and milk; let soak 1 minute.

Add egg, onion, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix gently.

Fold in ground beef just until combined—don’t overmix.

Divide into 4 equal portions and shape into mini loaves.

Mix glaze ingredients and spread evenly over each loaf.

Place meatloaves in the air fryer basket, leaving space between them.

Air fry at 370°F (188°C) for 13–15 minutes, or until internal temp reaches 160°F.

Rest for 3 minutes before serving.

Notes

Cooking Tips

  • Use parchment liners or foil for easy cleanup.

  • Don’t overcrowd the basket—airflow = better browning.

  • Let meatloaves rest before serving to lock in juices.

  • For extra moisture, mix in 1–2 tablespoons grated zucchini.

Variations

  • Turkey Mini Meatloaves: Swap ground beef for ground turkey; add 1 tbsp olive oil for moisture.

  • BBQ Style: Replace ketchup with BBQ sauce in the glaze.

  • Low-Carb: Use crushed pork rinds or almond flour instead of breadcrumbs.

  • Cheesy: Add ¼ cup shredded cheddar or mozzarella to the meat mixture.

  • Italian-Style: Use marinara sauce glaze and add Italian seasoning + parmesan.
