Ingredients
1 lb ground pork (or chicken, turkey, or beef)
2 cups coleslaw mix (cabbage & carrots)
2 cloves garlic, minced
1 tbsp fresh ginger, minced (or 1 tsp ground ginger)
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp rice vinegar
1/2 tsp black pepper
1/2 tsp salt (adjust to taste)
10-12 egg roll wrappers
Cooking spray or olive oil spray

Cook the Filling
In a large skillet over medium heat, cook the ground meat until browned. Drain excess fat if needed.
Add garlic and ginger; cook 30 seconds until fragrant. Stir in coleslaw mix, soy sauce, sesame oil, rice vinegar, salt, and pepper. Cook 2–3 minutes until veggies soften slightly. Remove from heat and let cool.
Assemble Egg Rolls
Lay an egg roll wrapper in a diamond shape. Place 2–3 tablespoons of filling near the bottom corner.
Fold bottom corner over filling, fold in sides, then roll tightly. Seal edge with a little water.
Air Fry
Preheat air fryer to 380°F (193°C).
Lightly spray egg rolls with oil and place seam-side down in a single layer.
Air fry for 10–12 minutes, turning halfway, until golden and crispy.
Serve
Let cool slightly and serve warm with your favorite dipping sauce.
