Ingredients

4 large flour tortillas (burrito-size)

6 large eggs

1/2 cup milk (optional, for fluffier eggs)

1 cup cooked breakfast sausage or bacon, crumbled

1 cup cooked breakfast potatoes or hash browns

1 cup shredded cheddar or Mexican-blend cheese

Salt and black pepper, to taste

Cooking spray or olive oil spray

Instructions

Scramble the eggs:
Whisk eggs with milk, salt, and pepper. Cook in a skillet over medium heat until just set. Remove from heat (slightly soft is best).

Assemble the burritos:
Lay tortillas flat. Evenly divide eggs, sausage/bacon, potatoes, and cheese down the center of each tortilla.

Wrap tightly:
Fold in the sides, then roll up tightly into burritos.

Air fry:
Preheat air fryer to 375°F (190°C). Lightly spray burritos with cooking spray.
Place seam-side down in the basket and cook for 10–12 minutes, flipping halfway, until golden and crispy.

Serve:
Let cool 1–2 minutes before serving. Enjoy as-is or with salsa, sour cream, or hot sauce.
